Pepper Strip Tostadas

My kids love peppers.  And, really, what’s not to love?  They’re crunchy, sweet, and colorful.  The perfect snack!  So, naturally they devoured these pepper strip tostadas.  I love the tostadas because they are quick, easy, healthy, and vegan.  It’s a win-win situation!

 

If you are like me and don’t get home until ten minutes before supper some nights, you can even cut up the vegetables the night before.  Then you can have it on the table in under ten minutes.  You can’t beat that!

 

 

Easy Vegan Pepper Strip Tostadas

Ingredients:

1 green pepper

1 red pepper

1 yellow pepper

½ onion (white or yellow)

1 jalapeno (only part of one if you prefer a less spicy dish)

2 cloves garlic, minced

1 taco seasoning packet (To taste.  We use less than ½ a packet.)

olive oil

tostada shells

cilantro (optional)

 

Directions:

  1. Chop peppers, onion, and jalapeno into long, thin strips.  Mince garlic.
  2. Saute in pan until onions are translucent.
  3. Add taco seasoning packet to taste.
  4. Serve on tostada shells with cilantro.

 

This recipe is also very forgiving.  Red and yellow peppers can be expensive at different times of the year, so feel free to substitute more green peppers or orange peppers.  Whatever works in your budget will work in the recipe!

 

Add a side of Crockpot Refried Beans, rice, or fruit and you’ve got yourself a complete meal.
