Potato Tacos

Some nights (ahem, most nights) I do not have a lot of time to cook supper.  With teaching, playing with my kids, blogging, and church commitments, my life is pleasantly full.  Since cooking elaborate meals is not one of my core competencies or priorities, I try to find quick and healthy meals to feed my family.

 

Enter…potato tacos.

 

This is a fasting-friendly recipe that is kid-friendly and can be whipped up in less than thirty minutes.  I also will vary up the base recipe and add any vegetables that we have on hand.

 

Potato Tacos Recipe

4 potatoes

½ onion

1 red pepper

1 green pepper

½ cup frozen corn

1 celery stalk

jalapeno to taste (optional)

2 Tbsp vegetable oil

Salt and pepper to taste

Juice of one lime

 

Serve with:  corn tortillas

avocado (optional)

cilantro (optional)

 

Directions:

1. Chop all vegetables.

2. Saute in frying pan until potatoes are soft and fried.

3. Squeeze the juice of one lime over the vegetables.

4. Heat tortillas.

 

Potato Tacos pair well with Crockpot Refried Beans and a big salad.

      Me, too. I am a sucker for any recipe remotely Mexican. Add avocado, and I’m in love!
